We have trailer roof vents that have an included wall switch you can use, but it is not recommended to use one with the MaxxAir MaxxFan Mini Roof Vent with 12V Fan # MA00-04301M because this vent is meant to have 12 volt power constantly, and a switch interrupts the voltage, which could damage the circuit board.
If you'd like, what you can use instead is an option from Ventline which includes the wall switch for simple use:

Since there are supports on the inside of the frame that block where the brackets of the Adjustable Width Trailer Hitch Receiver for RVs, 22" to 72" Wide # 13703 need to attach, the best option would be to use the Curt RV Bumper 2" Trailer Hitch Receiver # E-100 which will mount to the 4" bumper your 2008 Jayco Eagle 320RLDS has.
I do not recommend cutting off any factory supports to allow clearance for the hitch to fit.

The operation for the Blue Ox SwayPro # BXW1000 is going to be the same even with using the larger 1,500lb Bars # BXW4008. With that said if this is a different trailer than the one you previously used the spring bars for the trailer itself may be different heights so you may need a different chain link to get the proper amount of spring tension on the bars. Electric trailer brakes like the Dexter Nev-R-Adjust Electric Trailer Brake Kit # 23-458-459 should only utilize two wires, the power and the ground. You do need to connect each of the wires to your brake assemblies, and each should have its own ground.

I'm not totally sure what the exact issue is but it sounds like something with the gears inside therefore you'd be better off with a full replacement landing gear set for which we have a couple great options. The Lippert Manual Landing Gear Set part # LC333966 is a manual replacement option and the Lippert Electric Landing Gear Set part # LC333964 is a power replacement option. The RR error code on your Lippert Ground Control # LC358590 is one of the errors listed in the manual, and it states to check harness connections at controller and at jack, check harness for damage and repair or replace as necessary. Normally to clear a code like this you have to extend the jacks 6 inches before retracting.
